Hoppin' John Salsa

Ingredients:
1 cn (15oz) black-eyed peas
-drained/rinsed
1/2 c Chopped carrots
1/2 c Chopped celery
1/4 c Chopped red onion
2 tb Chopped cilantro
1/4 c Red wine vinegar
1 tb Vegetable oil
1 ts Sugar
Salt
Black pepper
Instructions:
Combine first five ingredients. In small bowl, combine remaining ingredients. Pour over vegetable mixture and combine.
